HIGHLAND PARK Single Malt Scotch Whisky has partnered with the MOPOKE FESTIVAL and Chef Karl Patrick Thomas.

MOPOKE FESTIVAL presents “FLAVOURS FROM THE FIRE” by HIGHLAND PARK Whisky, bringing an extraordinary fire-inspired dining experience to The Domain. Chef Karl Patrick Thomas (Ex. Sydney Opera House) brings to life trends in the world of BBQ cuisine with his three-course dining menu, paired with Highland Park’s smoky and sweet single malt whiskies.

Highland Park has been crafting award-winning single malt Scotch Whisky in Orkney since 1798, and is the perfect whisky for pairing with fire-cooked dishes with its unexpected contrast of sweet and aromatic smoky flavours.

A wild harmony of tastes, Highland Park is all about celebrating unusual taste combinations and finding balance in the extreme. This is a truly unique and immersive culinary experience not to be missed.

Starting from Martin Place, walk straight through The Sydney Hospital, to the Three Giant Tipis (TENTS) in The Domain.

WELCOME COCKTAIL (FLAMED)

ENTRÉE, PAIRED WITH HIGHLAND PARK “12YO” – Selection of cheese and charcuterie with salad

MAIN COURSE, PAIRED WITH HIGHLAND PARK “15YO” – Smoked and Grilled Pinnacle Grass fed short rib of beef, whipped gentlemen’s relish, crushed new potatoes, pickled heirloom carrot salad. Served with charcoal baked bread & smoked butter.

MAIN COURSE, PAIRED WITH HIGHLAND PARK “15YO” – Non-meat option: Beef was substituted by king oyster mushroom.

DESSERT – Crepe: orange marmalade, grilled almond, flambé with Highland Park whisky.

EXPECT – Life is too short, to ever eat BAD BEEF – 10/10 very bad “short rib of beef” i.e. “inedible short rib of beef”. Yes the five thin slices of “short rib of beef” (less than 100 grams) were all impossible to cut by using the supplied steak knife. When the partially trained hospitality person kindly asked, whilst staring at the quite uneaten beef on my plate – “How was your meal?” and my reply was “TERRIBLE and PLEASE TELL THE CHEF”. Yes the presentations of the Scotch Whisky for each course, together with the rest of the delicious menu, was outstanding and highly recommended with nine out of ten.

Screenings starting from 6pm Saturday 4th February 2023, and then for the next twenty-four hours, a selection of unique films, will run all through the night and day, providing Sydney movie lovers with a truly unique experience. Playdough is the favorite pastime of everyone. Who else can remember making some fun shapes with playdough when they were younger? Now you have the chance to do that with our playful playdough garden. Fun for all ages, the garden will let you grab some play dough and create to your hearts content. There will also be a team to help guide you with your “glow in the dark” playdough art. You will also get the chance to show off your art on a stand and take pictures of it.
